When the option a shopper wants is sold out, a small form under the buy button asks for their email. As soon as Shopify says the option can be bought again, each shopper gets one email with the product picture, the option, the price and a button straight to it. Send to everyone at once or in batches, so five units back do not wake five hundred people. See which sold-out products are asked for most, and the sales the emails brought back. The form follows the option in any theme.
